Assistant professor of Pediatrics Jennifer Chambers, M.D.(University of Alabama at Birmingham)offers some tips to resolve potential sleep issues:

Stick to the schedule. Be strict with your children’s normal bedtime in the week prior to the time change. If bedtime is 8 p.m., start your bedtime routine early enough that they can be asleep by bedtime or a little earlier.

Eat meals on time or 30 minutes earlier. Meal times help set the day's routine more than anything else.

Put kids to bed a little early the night of the time change so that they wake up earlier. (You can savor this last night of easy bedtime after the kids are asleep.)

Don't let them sleep late the first morning of daylight-saving time; you need them to be tired by bedtime. Early morning sun will reset the internal clock faster than anything else, so get them outside early in the morning if possible.

Shift naps earlier and do not extend them the first week. Some may be tempted to skip a nap in hopes this will make the child go to bed earlier, but some children will not rest as well during the night if they are overtired.

Explain daylight-saving time if your child is old enough to understand. They will be less likely to resist going to bed “early” if they understand it. Many children will find it intriguing and ask a multitude of questions about the ability to change time.

Be a little lax with bedtime the week after the time change. Set bedtime 30 minutes later than normal during this week to make the transition smoother and return children to their regular bedtime the next week, after their bodies have adjusted. But, still begin the bedtime routine at the regular time so they can calm down and get sleepy. For more details ....

I used to make muffin from ready-made mixes like Betty Crocker or Fiber One.But today, I tried recipe from this book(The New Best Recipe) .

3 Cups All-purpose flour

1 Tbsp. Baking powder

1/2 tsp. Baking soda

1/2 tsp. Salt

10 Tbsp. Unsalted Butter (1 1/4 stick), softened

1 cup Sugar

2 large Eggs

1 1/2 cup Plain Yogurt

1 tsp. grated lemon peel

1 1/2 cups Blueberries

Method

Preheat oven to 375°F.Adjust the oven rack to the middle-lower part of the oven.

Whisk together the flour, baking powder, baking soda, and salt; set aside.

In a large mixing bowl, cream butter and sugar together, beating until fluffy.

Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel.

Beat in one half of the dry ingredients until just incorporated. Beat in one third of the yogurt. Beat in half of the remaining dry ingredients. Beat in a second third of the yogurt. Beat in the remaining dry ingredients and then the remaining yogurt. Again be careful to beat until just incorporated. Do not over beat. Fold in the berries. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of flour.

Use standard 12-muffin muffin tins. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter. Or use one of those convenient vegetable oil sprays. Distribute the muffin dough equally among the cups. Bake until muffins are golden brown, about 25 to 30 minutes. Test with a long toothpick (we use a thin bamboo skewer) to make sure the centers of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve slightly warm.

Note:

Add 1 Tbsp. flour if you are using defrosted frozen berries.

1 12 or15 Oz. can Chickpeas (Garbanzo beans)

5 large potatoes, boiled

1 medium Onion,finely chopped

1/2 Onion, chopped

5 Garlic cloves

Fry until mixture becomes dark brown (note not to burnt), it doesn't take too long; add grounded paste; stir well. This is a base curry for any vegetable/chicken curry.

Add in boiled potatoes and chickpeas, you need to add some water if you want more curry and stir well.

Add salt to taste;garnish with chopped cilantro leaves.

Curry goes very well with naan, chappati or on some plain rice.

Note:

You can use raw potatoes instead of boiled but you need to bring mixture to a boil, stir and turn heat down to medium low, cover and cook,

stirring the curry every few minutes, until potatoes are done. It takes 15-20 min.

It is okay, if the potatoes fall apart in fact it makes curry more yummier.

Steam/Boil the vegetables(like Chow-Chow/Chayote, White Pumpkin) with 1 tsp. salt.

1 tsp. Toor Dhal

1 tsp. Chana dhal

1/4 tsp. Dhania or Coriander Seeds

1/4 tsp. Raw Rice

1/4 tsp. Cumin Seeds

1 Red Chilly

1 Green Chilly

2 Tbsp. Coconut, grated

1/4 tsp. Turmeric

1 spring of curry leaves

1 cup Skimmed Butter Milk (or) Skim 1 cup of curd with 1 cup of water and 1 tsp. salt

Method

In a small bowl, soak Toordhall,Chanadhall,Raw rice,Coriander and Cumin seeds for about 30 mins.

Steam/Boil the vegetables(like Chow-Chow/Chayote, White Pumpkin) with 1 tsp. salt.

Grind the soaked ingredients along with green chilly, grated coconut into a fine paste.

In a bowl, pour the buttermilk; add turmeric, curry leaves, ground paste, cooked vegetables; mix well

Check for salt and adjust the salt & consistency of the kuzhambu. The given water /curd ratio is precise enough.

Now heat the content on medium low flame for about 10 mins or until froth appears; once forth appears remove from the heat.

Heat the pan with 1 tsp. of Oil, season with mustard seeds, uraddhall, 1(or)2 red chilly and curry leaves and pour it over the kuzhambu.

Serve hot or cold with rice with any spicy side dish/poriyal

Note

Do not cook this kuzhambu on high flame - that will make the curd break and water will separate out.

This recipe used Okra: If adding Okra, saute it well in 1 Tbsp. oil until the goey stuff disappears and/or till okra is dry and cooked well.

Reheating is not advisable; If you prefer, serve this curry over hot rice.

I thought of posting this in summer but I wanted to make an entry to Priya's FIC: Pink/Rose event started by Sunshinemom so here it is.

In our home any pink food/toy/dresses are allergic to my little boy. That's the boys world until they grow up! If I wear pink dress he says....phew...girly girl! I often tell him that you are a having pink tongue and you like pink lemonade and strawberry smoothie, but he says boys are okay to have pink tongue and can drink their favorites he always loosen his rules if he likes....that's kids right. Like that I think, it's okay to drink this lemonade in spring. :)

Okay, Here is the simple recipe I used to make the pink lemonade.

Ingredients

1 cup white Sugar

4 cups Water

1 cup fresh Lemon juice

1/2 cup Cranberry juice

Method

Combine all ingredients (sugar, water, lemon juice and cranberry juice) in a pitcher.

Stir to dissolve sugar.

Chill for an hour, or serve over ice to serve immediately.

Note

This recipe used 1 cup cranberry juice.

Make sugar and water adjustments to taste.

Reduce sugar if using sweetened cranberry juice.

Keywords: Old fashioned pink lemonade with fresh squeezed lemon juice, simple syrup of sugar and water, and cranberry juice for color.

I used to submit my recipes to her events when I had my website. Recently she invited me for this.I'm delighted to submit for Earth Hour 2009.

It was really hard to decide what to cook for this event. So many conditions...:) Very less packaging, transport and energy consumption.
